Taco Salad recipe – healthy & easy
Think outside the shell for your next taco night with this Mexican salad featuring ground beef, kidney beans, cheese and mixed greens that’s served with a zesty mix of ranch dressing and salsa.

pkt (1.25 oz) 40%-less-sodium taco seasoning mix
can kidney beans
bottled ranch salad dressing
bagged salad greens
broken tortilla chips
shredded reduced-fat Cheddar cheese

- Heat a large nonstick skillet over medium-high heat. Add ground beef and cook, breaking up clumps with a wooden spoon, about 3 minutes, or until no longer pink. Add taco seasoning mix and cook, stirring, 1 minute more. Stir in kidney beans and heat through.
- Meanwhile, mix ranch dressing and salsa in a small serving bowl.
- Place beef mixture in center of a large serving platter. Surround with remaining ingredients. Serve with the ranch dressing mixture.
