thin-cut corned beef brisket (about 2 3/4 pound)

apple jelly

1/4
c.

sweet-hot or honey mustard

  1. Heat oven to 350°F. Put corned beef in a Dutch oven, add water to cover and bring to a boil.
  2. Cover and bake 3 1/2 to 4 hours until fork-tender. Remove from oven.
  3. Heat broiler. Line a rimmed baking sheet with nonstick foil. Place beef on sheet.
  4. Whisk jelly and mustard in a bowl until smooth. Spoon about 1/2 the glaze over beef.
  5. Broil 2 minutes or until glaze bubbles. Remove to a cutting board; thinly slice across the grain. Serve with remaining glaze.
