Ingredients
  • 1 sweet potato, baked
  • 2cups arugula
  • 1/4cup black olives
  • 1/4cup cucumber, chopped
  • 1ounce cheddar, chopped
  • 2tablespoons onion, chopped
  • 1tablespoon balsamic vinegar
  • 2teaspoons olive oil
  • 1 egg
Directions
  1. Cut baked sweet potato into wedges. Toss with arugula, black olives, cucumber, cheddar, onion, balsamic vinegar, olive oil. Poach egg, serve over salad.
