Everyone loves cannolis, but they are a pain to make. You have to make the wrapper dough, rest the dough, roll it super thin, then find a heatproof mold to wrap it around so that it holds a tubular shape while it fries. No one’s got time for that.

Ready in a fraction of the time, these cannoli egg rolls give you the same creamy-on-the-inside, crispy-crunchy-on-the-outside results without all the heartache. If you have a little extra time on your hands, drain the ricotta overnight in your fridge to make the mixture easier to work with. You can also chill the mixture after everything’s combined to lessen the chance of the filling leaking under the extreme heat of the frying oil. But even if it leaks a little, just coat everything generously in powdered sugar, give it a drizzle of chocolate, and call it a day. Dessert is served.

(16-oz.) container ricotta

  1. Make ricotta filling: In a large bowl mix together ricotta, powdered sugar, orange zest, and vanilla until fully combined. Fold in mini chocolate chips. 
  2. Place an egg roll wrapper on a clean surface in a diamond shape and brush edges lightly with water. Spoon two heaping tablespoons ricotta filling into a line in the center. Fold up bottom half, tightly fold in sides, and gently roll upward to seal. Repeat with remaining wrappers and filling.
  3. In a large skillet over medium heat, pour enough oil to reach 1″ up the side of skillet. Heat until oil starts to bubble when a drop of water is added. Add egg rolls and fry until golden, about 1 minute per side. Transfer to a paper towel-lined plate to cool slightly. 
  4. In a small bowl, microwave together chocolate and oil until smooth in 30-second increments. Drizzle over egg rolls, then sprinkle with pistachios and dust with powdered sugar.
