Serves 1

  • 1 hard-boiled egg
  • 2 hard-boiled egg whites
  • 1/2cup avocado, chopped
  • 2tablespoons scallions, chopped
  • 1teaspoon fresh cilantro, chopped
  • 1/2teaspoon Dijon mustard
  • 2 slices tomato
  • 1 lettuce leaf
  • 1 black pepper to taste
  • 2 slices whole-grain bread
  1. In a bowl, lightly mash egg, egg whites, and avocado. Stir in chopped scallions, cilantro, mustard; season with pepper. Spread on whole-grain bread, add tomato, lettuce.
